This vegetable, common in Mexico and Central America, is a member of the gourd family and is a lesser-known, distant cousin of melons, cucumbers and squash. Chayote squash is kinda funny looking but don’t be fooled, it is easy to cook with, delicious to eat and really good for you. According to nutrition consultant and natural health expert, R. Jane Jester Hebert, chayote squash is “low in calories–one cup of cooked chayote squash has only 100 calories–and rich in nutrients, making it a good addition to any healthy diet.”
