Mix together the salt, pepper, cumin, and oregano, and then season both sides of the steak with the spice mixture.
Reposition so that the cut side is up and the grain is running horizontally.
Spoon ¾ cup of the chimichurri sauce into a bowl and stir in 2 tablespoons of the reserved bacon drippings. Reserve the remaining chimichurri.
