2. Ceviche
Ceviche, traditional Peruvian cuisine at its best, is the country’s national dish and for good reason. It’s simple, pretty easy to prepare and, since the citrus “cooks” the fish, it requires no heat. Ceviche can certainly be served as an appetizer but we’re happy calling this fish, citrus stew a light summer dinner for a hot day.
