13. Shaved-Squash Salad with Tomatoes, Zucchini Blossoms, Ricotta, and Thyme Oil
Grab four baby pattypan squashes and thinly shave then on a mandolin. Combine with the zucchini, tomatoes, red-pepper flakes, and salt. Top with thyme oil, ricotta and sprinkle with basil. Serve with grilled chicken or fish.
