Continuing our series on grains today, we share an easy breakfast recipe with Amaranth. Known to the Aztecs as the “food of immortality”, amaranth is a high quality source of protein. This tiny seed the size of sesame seeds can be popped in a hot skillet like popcorn or can be combined with other grains to create a delicious side dish. Packed with iron, phosphorous, magnesium and twice the amount of calcium as wheat, amaranth is a must-try powerhouse grain.
A SWEET MEMORY
Growing up, one of my favorite candies were Alegrías—a candy made from Amaranth mixed with piloncillo syrup and studded with nuts or raisins. Alegría means happiness and these sweet candies have been making me happy since childhood.
Now, with daughters of my own, I’d love to pass my love of Alegrías to them in a way we can enjoy daily. Served warm, this atole is brimming with amaranth, spiked with agave, and topped with fruit and nuts.

For an even creamier texture. add a splash of warm milk and enjoy the flavor of Alegrías every morning. Happiness in a bowl.

ATOLE DE AMARANTH CON PERAS
1 cup Amaranth
3 cups water
Pinch of salt
1 medium pear, diced and cored
4 TBSP of nuts, your choice (optional)
- Bring water to boil.
- Add salt and amranth.
- Return to a boil and then cover, reduce heat and allow to simmer for 20 minutes or until amaranth is tender.
- Stir occasionally.
- Add agave to taste, diced pears and, if using, nuts and milk.
- Mix and serve warm.
