Even better the next day: Arroz al Horno Valenciano with Cocido Madrileño leftovers. My abuelita is a native of Valencia, Spain and when she was a child, she and her family used to have Cocido Madrileño on Sundays. Then, with the Sunday leftovers, they prepared arroz al horno (baked rice) on Mondays, thus stretching the ingredients into a wholesome new meal. Arroz al horno is probably more popular than paella in Valencia, but it hasn’t become as famous worldwide.
