5. Shrimp and Avocado Ceviche
Not all ceviche is made with mild, white fish. Shrimp also makes a perfect base for ceviche, though the dish is prepared slightly differently when shrimp are involved. Here you actually briefly boil the shrimp before mixing them with the lime juice marinade. The entire concoction of shrimp, juices, scallions, chiles, vinegar, thyme and oregano is left to stand at room temperature so that the dish is not hot, but also not cold. To serve, add some diced avocados on top and scoop up the ceviche with a crunchy tortilla chip for a little bite of heaven.
