2. Scallop Ceviche
This dish is a bit more simplified because it is made in one bowl and left to marinate for 4-6 hours. You literally chop, mix, and then leave it…doesn’t get much easier than that. The raw scallops are combined with green tomatoes (yes, you can use regular tomatoes if you cannot find green ones), shallots, jalapeño pepper, lime juice, orange juice and salt. Once it’s ready, top it off with fresh cilantro and avocado for a refreshing dish that is healthy, filling, delicious and oh-so-easy to make.
