11. The ‘R Month’ Rule
The R Month Rule says that eating oysters during months without an R—basically the summer—is a no-no. Thanks to farming and refrigeration that rule no longer applies, so you can enjoy oysters year round.
12. Cleaning & Shucking
Before shucking, scrub your oysters under cold running water. Shucking takes some practice, a steady hand and an oyster knife if you want to avoid bandaged fingers.
