Next, as per The Guardian, roll out the pasta into a sausage shape and divide into 6-8 pieces. Roll out each piece with a rolling pin on a little extra flour or on the semolina. Lift the pasta pieces and turn over after each roll. Then roll the pasta as thinly as possible and cut into random pieces. Your pasta’s size and shape can range from the size of a silver dollar to the size of a cell phone, just be creative! Then put them on a tray sprinkled with flour or semolina and leave them in a cool place.
