As per Dummies.com, for a homemade pasta recipe serving of four, you’ll need about 7 oz of pasta flour, salt, 3-4 egg yolks, 1 egg, olive oil, and some ground semolina for rolling. To start, place the flour onto a clean work surface, make a well in the middle (can also look like a volcano) and sprinkle with a touch of salt and oil. Then, whisk together 3 of the egg yolks with the whole egg. Pour the egg mix into the center of the well and work the flour into it. If the mix seems too dry add another egg yolk. Bring the mixture together and knead until you have a dough as smooth as your baby’s bottom. If the mixture feels a bit sticky, slowly add more flour and knead it in. If the mix feels dry add a little of the leftover egg white. Work the dough by hand for at least 10 minutes. Then wrap the pasta ball in Saran wrap and allow it to sit in the fridge for a minimum of 20 minutes or more.
