Horseradish Burgers With Cheddar & Grilled Onions
INGREDIENTS:
1 pound 85% lean ground beef
2 tablespoons prepared horseradish
2 teaspoons Dijon mustard
1/2 teaspoon salt & 1/4 teaspoon ground black pepper
4 (1/2-inch-thick) slices red onion
2 teaspoons olive oil
4 ounces Cabot Sharp Cheddar, sliced
4 large slices sourdough bread, cut in half

DIRECTIONS
1. Preheat grill to high.
2. In medium bowl, gently combine beef, horseradish, mustard, salt and pepper. Shape into four 3/4-inch-thick burgers.
3. Brush onion slices lightly with olive oil.
4. Brush grill with wad of paper towel dipped in oil to prevent sticking. Place burgers and onion slices on grill. Cook burgers to desired degree of doneness, about 4 minutes per side for medium rare. Cook onions until browned, 4 to 5 minutes per side. Toast sourdough bread lightly.
5. Top burgers with cheese and cover with grill lid or foil until cheese is melted, about 1 minute. Serve on lettuce-topped bread, garnished with grilled onions separated into rings.
