1. Classic Ceviche
This classic recipe uses traditional flavors and ingredients that you’ll find in most ceviche dishes. As for what type of fish to use, there is some flexibility (remember fresh is key, so with whatever mild fish looks best). The fish is first marinated in lime juice to “cook” it, and after being cured for 4 hours it is combined with tomatoes, chili pepper, cilantro, olives, orange juice, sugar and avocado. Top it all off with crumbled tortilla chips and you are set.
