In the mood for a comforting soup? This vegetarian version of a seafood bisque requires adding to 2 lbs of puréed artichokes to a 6 qt. pot with butter, chicken broth, garlic, and salt and pepper. Bring to a boil, reduce heat and simmer for an hour. Then add whipped cornstarch and heavy cream until it thickens. Garnish with parsley or cilantro and serve with your favorite rustic bread.
