Instructions:
1. Cut meat into 1-inch cubes.
2. Add salt and freshly ground black pepper to taste.
3. In a large heavy pan over medium-high heat, heat oil until almost smoky.
4. Add the meat and garlic and cook until the meat is browned, about 3-5 minutes.
5. Add the red chile sauce, adjust seasonings and continue to cook for 15 to 20 minutes or until meat is cooked.
Note: The dish can be made ahead and reheated when needed.
