Steam Tamales:
- Remove basket from the steamer pot and set aside. Fill the pot with 2 inches water and bring to boil over high heat.
- Arrange bundles in the steaming basket and insert the basket back into the pot. Cover, lower heat to medium, and steam 1 hour.
- Check water level after 30 minutes and restock with boiling water if needed.
- Remove pot from heat. Carefully remove basket from pot and set on a folded kitchen towel to cool slightly. Serve warm or at room temperature.
