1. Egg Muffins
For breakfast, lunch or dinner, we find these egg muffins are a hit. To make one dozen, simply mix together nine eggs, chopped broccoli, a splash of milk and some chopped ham or sausage. Evenly distribute the mixture into an oiled muffin tin, sprinkle some shredded cheese on top of each one, and bake at 350 degrees for ten to 15 minutes or until golden brown on top. This broccoli recipe is quick and easy but more importantly, it provides protein, fat, fiber and lots of vitamins and minerals. We love to serve these nice and warm with salsa and diced avocado for any meal or snack.
