7. Spaghetti alla Bottarga • Sardinia
Sardinia is an island off the west coast of central Italy. Sardinia’s contribution to Italian food consists of hearty stews and lots of lamb. However this spaghetti recipe is made with bottarga, a delicacy made from the salted, cured roe pouch of grey mullet or blue fin tuna. This scrumptious recipe is seasoned with garlic, red pepper and lemon juice. The bottarga is shaved into thin slices on top of the pasta.
