Puglia, located in the heel of the boot, is known for its unique pasta dish with chickpeas and fresh tagliatelle pasta. Tagliatelle is a flat noodle similar to fettuccini. The chickpea sauce is made with carrot, celery and tomato. You fry some of the pasta in olive oil to add a crispy crunch to this hearty pasta dish.
