Street Style Tomatillo Salsa

According to Martha Rose Shulman, author of The Very Best of Recipes for Health, “Tomatillos have a rounder, fruitier and more acidic flavor and a richer texture than regular green tomatoes. I wouldn’t try to substitute one for the other.” Although the tomate verde or tomatillo is quite the versatile fruit, it’s pretty obvious when a regular old tomato is used in its place. Tomatillos are a fresh burst of flavor and because of their acidic quality, they adequately balance fats, such as the rich, buttery avocado in a guacamole, or the fried tortilla chips dipped into a Tomatillo Salsa.
