If you are an aspiring Chef or simply want to sharpen up your culinary skills then the Culinary Institute of America’s Boot Camp is just the ticket. I attended one of the week-long sessions at the CIA’s Hyde Park location in New York and learned that during this intense course, you come away with a whole new set of skills you can employ in your home cooking.

From day one, you are dressed in an actual Chef’s Uniform, attend intensive classroom sessions, and then you spend the rest of the time in a CIA Kitchen preparing a variety of recipes with easy to challenging skill levels.

CIA Boot Camp I-Photo2Our Chef/Instructor, Chef Stephen J. Johnson, offers years of experience, technique, and know-how that he shares with you along the way. Among the wonderful easy and useful techniques I learned was a fast and easy way to peel garlic.  You simply place the garlic cloves in a stainless steel metal bowl, invert another metal bowl over it and shake hard.   Surprisingly, the cloves emerge peeled and ready to go!
