Classic Ragú Bolognese
The traditional meat ragu from northern Italy, this standard spaghetti sauce sometimes calls for both beef and veal, but the ground beef is the immutable component. Simmered over the course of a few hours and splashed with complimentary flavors like tomato, milk, and parmesan Bolognese sauce is one of the greatest incarnations of beef. Put it on noodles or layer it with cheese and béchamel in a lasagna. Bon appétit!
Korean Beef BBQ (Bulgogi)
A sort of beef mixed grill, traditionally eaten at Korean barbecues, bulgogi is one of the most flavorful ways to grill beef. If standing on an icy deck manning the grill is not your idea of a good time, you can always check it out at a Korean joint, equipped with tabletop grills and great ventilation, or simply wait for spring.
