Summer is coming, which means two things: hello swimsuits and goodbye carbs. It also means it’s high time to rev up our arsenal of delicious and healthy recipes, those simple little dishes that will work for weekday dinners, cocktail parties or just out by the pool. Take heart, we got you covered. Kick off the summer right with our refreshing shrimp on cucumber appetizers—a starter recipe that packs protein punch and wonderful crunch.
As Livestrong.com reports, “Four ounces of boiled or steamed shrimp contains just 112 calories. This serving provides nearly 24 g of protein and 1.2 g of fat–only 0.3 g of which is saturated. Shrimp contain no carbohydrates. Like all seafood, shrimp contains heart-healthy omega-3 fats. The U.S. Department of Agriculture recommends all adults consume 8 ounces of seafood, like shrimp, a week. A serving of shrimp provides about 15 percent of your daily needs for omega-3 fatty acids.” The other star of this dish is cucumber, known for its freshness and diuretic properties. A dash of Tajín ® not only finishes the dish with a zesty kick, but the Mexican chiles in the seasoning are also loaded with antioxidant properties. In fact, chiles are known to contain a health benefiting alkaloid called capsaicin, which not only gives them their bold and spicy character, but also additionally have anti-bacterial, anti-carcinogenic, analgesic and anti-diabetic properties. Capsaicin was also found to reduce LDL cholesterol levels in obese individuals.
The real beauty of this dish is its universality, as it works well for brunch, lunch, dinner and even snacking. How’s that for good news?
