“Eat clean” is our new nutrition mantra. Instead of starvation diets and weight loss fads we know to eat clean, whole foods; to steer clear of sugars, carbs and saturated fats; and to keep our exercise on point. Eating clean is great on many levels. Not only does it keep you conscious of what you eat, but it also keeps you creative about what you prepare to keep things flavorful and interesting.
We love the fact that Mexican cuisine lends itself naturally to eating clean. Not only is it a mostly gluten-free diet (think corn tortillas and rice instead of bread and pastas), but also because it calls largely on fresh ingredients such as vegetables and herbs.
Here’s our version of a simple tomato and cucumber salad, with Tajín Clásico, whose mild flavor and lime, sea salt and chile ingredients bring the crunchy veggies to life. You can never have too many fresh ingredient recipes on hand when you’re on a mission to eat clean!
Ingredients
1/2 English or seedless cucumber, diced
2 vine ripe tomatoes, diced
Handful flat-leaf parsley, chopped
1/2 medium red onion, chopped
2 tablespoons red wine vinegar, a couple of splashes
3 tablespoons extra-virgin olive oil, eyeball it
Tajín Clásico
Directions
1. Combine all ingredients in a bowl.
2. Dress with vinegar and oil
3. Sprinkle on Tajín Clásico to your taste.
