This easy and affordable ceviche by Juan Mondragon, courtesy of Tabasco®, skips the fish and instead uses prickly pear cactus as its base. Born in Mexico City, Mondragon’s passion to create delicious and healthy meals evolved into Juan’s Restaurante, frequented by Hollywood stars. And today Juan is referred to by food critics and journalists alike as the “King of Cactus.” This dish will conjure up visions of sitting on a tropical beach idling the hours away.

THE POOR MAN’S CEVICHE
Serves: 4
Ingredients:
4 green mangos, peeled and shredded
3 bell peppers of different colors (yellow, red, green), diced
½ red onion, julienned
2 cups cooked prickly pear (tender cactus), diced
½ cup fresh cilantro, chopped
¼ cup fresh lime juice
¼ cup fresh orange juice
4 teaspoons olive oil
2 tablespoons Tabasco® brand Original Red Sauce
Salt and pepper to taste
Fresh cilantro leaves for garnish
1 plantain, sliced into leaves and browned, to eat alongside the ceviche in place of chips
Instructions:
- Mix all ingredients in a bowl
- Add lime and orange juices, olive oil and Tabasco Sauce last.
- Add salt and pepper to taste.
- Stir the ceviche to combine.
Optional: This ceviche may be served along with grilled shrimp.
