First up: pre-peeled whole cloves. Pop them in a freezer-safe bag, squeeze out the air, and toss them in. When you need one, just grab a clove—it’s ready to use frozen, no need to thaw. It’ll release its oils perfectly into your hot pan or sauce.
Second: minced garlic in oil—this is my personal favorite. Chop a bunch of cloves, spoon them into an ice cube tray, and cover each cube with a little olive oil. Freeze overnight, pop the cubes out, and store them in a bag. Each cube is roughly one tablespoon of ready-to-cook garlic. Boom—instant flavor bombs for soups, stir-fries, and pasta.
What About Whole Heads of Garlic?
You can freeze a whole head of garlic, but I wouldn’t recommend it. The texture gets mushy, and peeling it raw becomes a sticky nightmare. Instead, roast the whole head first—drizzle with oil, wrap in foil, and bake at 400°F for 40 minutes. Then squeeze the soft, caramelized cloves into a bag and freeze. That’s sweet, spreadable gold for months to come.
One more trick: garlic paste. Blend peeled cloves with a splash of oil and a pinch of salt, then freeze in tiny portions. This paste is your shortcut to incredible dishes in seconds. No more dragging out the cutting board when you’re hangry.
