I have a confession to make…I don’t really like potatoes all that much. I know, it’s crazy, who doesn’t like potatoes, right? Me. I don’t. I mean, I tolerate them in things like my abuela’s breakfast burritos or my husband’s huevos rancheros but I don’t seek out potatoes as a side or main dish. Ever. And then, I tried these TAJIN style pan fried potatoes and ladies and gentlemen, my potato world has forever changed.
A little bit sweet, a little bit spicy and prepared to make them golden and crunchy on the outside and fluffy and soft on the inside…I die. And now I like potatoes. Bam!

The thing I love about this recipe is that you can use different kinds of potatoes for different results. My kids love it when I use sweet potatoes and my husband is obsessed with russets. As for me? I’m a convert and I don’t care. I will prepare any pan fried potato using this method and will eat them plain, dipped in ketchup, even on top of a salad. It’s so easy, quick and cheap to make, you’ll love this dish as much as I do, I’m sure!
