With Summer in full swing, I enjoy hosting relaxed dinner parties with family and friends. While the men grill, the ladies gather in the kitchen. We laugh, sip glasses of wine while we dice, chop, and chat; pulling together big platters of light bites. We set out a big salad, a few appetizers, and a tray of cheeses. The last thing we want is to be behind a hot stove or have to fire up the oven.

After a light summer meal it’s nice to have a little something sweet. Luckily, with a few mangos, a drizzle of tequila, and a splash of lime juice you can throw together a summer dessert worthy of company in five minutes flat. And all in one pan. Served over ice cream, this quick dessert is light, tangy, and sweet. Choose a mango that is firm to the touch and not too ripe.

MANGO ENTEQUILADO
Serves:
4-6

Ingredients
2 large mangos
4 tbsp. butter
½ cup sugar
½ cup tequila
1 cinnamon stick
Juice from 1 lime
Vanilla ice cream

Instructions

  1. Peel and slice mangos.  
  2. In a sauté pan over medium low heat, cook butter, sugar, tequila, and cinnamon stick.
  3. Cook, stirring occasionally for 6-8 minutes or until all sugar is dissolved.
  4. Add mangos; continue to cook until mangos are warmed through, remove from heat and add lime juice.
  5. Serve over vanilla ice cream.

Note:  possible worries about flare up… add the tequila off the flame.
