BROWN RICE WITH VEGETABLES

1 cup GOYA® Brown Rice
2 TSP GOYA® Extra-Virgin Olive Oil
½ red onion, finely chopped
½ red bell pepper, finely chopped
6 oz fresh spinach, coarsely chopped (about 4 cups)
2 TSP GOYA® Minced Garlic
GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
- Cook rice according to package directions.
- Meanwhile, heat oil in medium skillet over medium-high heat. Add onions and peppers; cook until vegetables are soft, about 7 minutes. Add spinach and garlic; cook until spinach wilts and garlic is fragrant, about 1 minute more.
- Add cooked rice to large serving bowl. Stir in cooked vegetables; season with Adobo. Serve warm.
