The cure for the common cold night: this warm and comforting ham & pea soup. With only 10 minutes of prep time and a handful of GOYA® pantry ingredients, this vegetable soup is sure to warm you up—stat!

QUICK HAM & PEA SOUP

Ingredients
1 tsp. GOYA® Extra Virgin Olive Oil
½ lb. cooked ham, cut into ¼” pieces, divided
1 small onion, finely chopped (about 1 cup)
1 small carrot, finely chopped (about ¾ cup)
1 tbsp. GOYA® Minced Garlic, or 6 cloves garlic, finely chopped
2 cans (15.5 oz. each) GOYA® Whole Green Peas, undrained
2 packets GOYA® Ham Concentrate mixed with 3 cups water
1 jar (4 oz.) GOYA® Pimientos, drained and finely chopped
GOYA® Adobo All-Purpose Seasoning with Pepper
Instructions
- Heat oil in medium, heavy-bottomed saucepot over medium-high heat. Add half of ham pieces; cook, stirring occasionally, until golden brown, about 5 minutes. Add onions and carrots to pot, cook until onions are translucent and carrots are tender, about 15 minutes. Stir in garlic, cook until fragrant, about 30 seconds more.
- Add whole green peas and ham concentrate mixture to pot, bring to boil, stirring occasionally. Puree soup in batches in blender; return to pot. (Or, use submersion immersion blender to puree soup until smooth).
- Return soup to pot; stir in remaining ham and pimientos. Bring soup to boil. Season with Adobo, to taste.
