Grab a damp paper towel (not soaking wet, just damp—like a handshake from a shy person). Wrap your pit in it, then slide it into a ziplock bag. Pop that bag in the fridge, not the freezer! We’re chilling, not assassinating.
Leave it there for 8 to 12 weeks. Yes, that’s a long time. It’s basically a seasonal sitcom binge for your pit. Check it every couple of weeks. If you see mold, switch out the paper towel. If you see a tiny root peeking out? Party time!
