If you’re adding them to a cold dish like a pasta salad, quickly steam them in the microwave for 60 seconds with a splash of water, then rinse under cold water. They’ll perk right up.
What About Organic? Does It Matter?
Organic beans do freeze better raw because they tend to have firmer cell walls from less nitrogen fertilizer. But conventional works fine, too. Just scrub them well before trimming—freezing doesn’t kill bacteria.
And for the love of all that is crunchy, never freeze beans that have started to wrinkle. They’ll turn into leathery ropes. Freshness is non-negotiable here.
