If Russets are the fluffy cloud, Yukon Golds are the silken robe. These are my personal ride-or-die spuds. They have a medium starch content and a thin, delicate skin (which you can totally leave on if you’re feeling rebellious).
What makes them special? They are naturally buttery in flavor and color. You mash them with a little warm milk and a fat knob of butter, and you get something that looks like it’s already been stirred with gold.
The texture is dense and creamy, not airy like a Russet. It’s the kind of mash that holds a pool of gravy without breaking a sweat. You won’t get glue here, even if you get a little aggressive with the masher. They are the forgiving, sophisticated friend every dinner party needs.
