9. Zucchini Ribbon Pasta
This side dish combines zucchini “noodles” (aka zucchini sliced to look like noodles) and actual noodles to make a flavorful accompaniment to any meal. The red pepper flakes add a kick, the sauce made from chicken stock, olive oil, Parmesan and herbs is light but satisfying and the entire dish is beautiful to look at and even better to devour. It’s so good you don’t really need a protein, but we’ve served it with grilled shrimp and roasted chicken and it was to die for.
