Instructions

For the Mole:
1. Heat 1 Tbsp. pork lard in a pan on medium heat. Add the pumpkin seeds and toast until lightly browned. Remove from pan and set aside.
2. In the same pan, heat the remaining Tbsp. pork lard over medium heat. Add the tomatillos, cilantro, scallions, and poblano pepper. Cook until just tender.
