The white color appears on all carrots when they start to dry out — these carrots get it faster because the skin has been removed so they dry out faster. The FDA advises that baby carrots, and just about every other packaged vegetable, be washed in water containing small amounts of chlorine as a disinfectant. (We also drink water treated with chlorine and swim in chlorinated pools.)
