But wait! If you want them super duper firm for a cold salad, maybe hold off on the salt until the last 10 minutes. It’s a spectrum, not a law. Experiment and feel like a mad scientist.
Bring It to a Boil, Then Simmer Like a Chill Person
Crank that heat to high. You want a rolling boil, not a sad little bubble fest. Then, immediately turn the heat down to low. Cover the pot with a lid, but leave it slightly cracked so steam doesn’t build up and make them weepy.
Set a timer for 20 minutes. Go scroll Instagram. Sing a song. Do some lunges. But do not wander off and forget.
At 20 minutes, test one. It should be tender but still have a slight toothsome bite—like al dente pasta, but for earthy people. If it’s crunchy, give it 5 more minutes. If it’s falling apart, you’ve overshot the window.
