TURKEY MEATBALLS
Serves: 4 to 6

Ingredients:
1 pound of lean ground turkey
1 cup whole wheat bread crumbs
1 egg
1 tsp. parsley
1 tsp. basil
1 tsp. oregano
Garlic, salt and pepper to taste

Instructions:
1. Mix all ingredients in a large bowl. Roll into small balls and place on baking sheet sprayed with cooking spray or covered in non-stick aluminum foil.
2. Bake at 400 degrees for 30 minutes.
3. Serve with toothpicks and your favorite marinara sauce or gravy. In a pinch I love to use Emeril’s All Natural Tomato & Basil Pasta Sauce.

For quick and easy gravy:
Dissolve a low sodium chicken, turkey, or beef bouillon cube in 2 Tbsp. of water, then mix in 8 ounces of nonfat Greek yogurt. You can add finely chopped basil, thyme and rosemary for extra flavor. Not only delicious….but nutritious, too!
