An 8 lb breast will feed a small army (or one very ambitious person for a week). Slice it cold for sandwiches with cranberry sauce and brie. Dice it for salads. Make turkey pot pie. Or my favorite: turkey nachos. Layer chips, shredded turkey, cheese, and pickled jalapeños, then broil until bubbly. Add a dollop of sour cream and pretend you’re a five-star chef who shops at gas stations.
If you somehow end up with dry leftovers (it happens to the best of us), revive them by simmering in a little chicken broth. It works like a charm. And if you burn anything, just tell people it’s “crispy artisanal edges.” They’ll believe you because you made roast turkey and they didn’t.
So go ahead. Buy that 8 lb breast. Salute it. Rub it down. Roast it like you mean it. And when you pull that golden, juicy beauty out of the oven, take a moment to remember you once thought this was hard. It’s not. It’s just a bird. A really, really good bird.
