D.C. has a world-class food scene. But the local specialties are… weird. Mumbo sauce is a sweet, tangy, vaguely-spicy condiment slathered on wings and fries. It’s like ketchup’s wild cousin. No one knows exactly what’s in it. Trade secret.
Then there’s the half-smoke. It’s a sausage, half beef, half pork, grilled and served with chili, onions, and mustard. Ben’s Chili Bowl is the place to get it. Barack Obama ate there. So did George Clooney. It’s a greasy, glorious mess.
Don’t sleep on Ethiopian food. D.C. has the largest Ethiopian community outside Africa. You eat with your hands, using spongy injera bread. It’s spicy, communal, and life-changing. Order the kitfo (raw beef) if you’re brave.
