Here’s the good news: this is the easiest storage trick you’ll ever learn. You don’t need fancy containers or special bags. Just grab your un-shucked corn and a plastic grocery bag from under the sink.
Pop the whole ears, husk and all, into the bag. Don’t tie it tight, just leave it loose so the corn can breathe a little. Now, put that bag in the crisper drawer of your refrigerator.
That’s it. You’re done. The husk does all the heavy lifting, keeping the humidity just right. Your corn will stay sweet and plump for at least three to five days.
A little confession from my kitchen
I used to be a corn rebel. I’d shuck it all at once, thinking I was being productive. Then I’d end up with sad, wrinkly kernels by Tuesday. It was a tragedy.
Now, I only shuck what I’m cooking that night. If I have four ears, I shuck two for dinner and leave two in the husk for tomorrow. It feels like I’m planning a little surprise for Future Me.
And Future Me is always grateful. Future Me gets to enjoy corn that tastes just as good as it did the day I bought it. It’s a small win, but it feels like a big one.
