This is the “I planned ahead like an adult” approach. Take your bread—sourdough, white, or even that leftover hamburger bun that’s been haunting you. Cut it into cubes, about half an inch each. Spread them on a baking sheet like you’re arranging tiny suspects in a lineup.
Now, leave them alone. Just leave them on the counter for a full 24 to 48 hours. Let the air do its dirty work. The atmosphere will suck the moisture out of those cubes like a vampire with a vendetta. If you see a crumb crawling away from exhaustion, you’re on the right track.
One warning: don't do this near a humidifier or during a rainstorm. Humidity is the enemy. It will make your bread chewy, not stale. Nobody wants stuffing that tastes like a yoga mat left in the sun.
