There's a faster way, and it makes you feel like a pro. Click the Control Center icon in your menu bar (it looks like two little switch toggles). You'll see a tile that says "AirDrop" with a little radar icon. Click that tile.
Now you get a quick pop-up with the same three options: No One, Contacts Only, or Everyone. Pick one, and you're done. No need to open a Finder window at all. It's like using a remote control instead of walking to the TV.
