6. Pasta, Kale and White Bean Soup
We never really considered adding kale to our soup, and yet, now that we’ve tried it we can’t imagine why. Kale is so good for you, and when it is cooked in a soup broth it becomes tender, easy to eat, and it absorbs the amazing flavors of the soup ingredients. Plus, as you cook the kale in the soup, any enzymes or nutrients lost in the cooking process are consumed in the broth, so you get to enjoy all of the health perks and all the flavor, too.
