8. Artichokes Provencal
Just because that French seaside getaway isn’t happening any time soon doesn’t mean you can’t recreate it at home. Just defrost two packages of artichoke hearts and channel Provence, a region in southeastern France known for simple, elegant dishes with a base of garlic, onions, tomatoes and olive oil. Don’t forget to add that white wine to the skillet as well, mademoiselle.
9 .Cream of Artichoke Soup
In the mood for a comforting soup? This vegetarian version of a seafood bisque requires adding to 2 lbs of puréed artichokes to a 6 qt. pot with butter, chicken broth, garlic, and salt and pepper. Bring to a boil, reduce heat and simmer for an hour. Then add whipped cornstarch and heavy cream until it thickens. Garnish with parsley or cilantro and serve with your favorite rustic bread. One of the favorite artichoke recipes, hands down.
