PICADILLO & SWEET PLANTAIN CASSEROLE
Serves: 6

Prep Time: 30 minutes
Total Time: 1 hour

Ingredients
2 tsp. GOYA® Extra Virgin Olive Oil, divided
¼ medium onion, finely chopped (about ¼ cup)
¼ green bell pepper, finely chopped (about ¼ cup)
¼ red bell pepper, finely chopped (about ¼ cup)
½ cup GOYA® Recaito
2 packets Sazón GOYA® without Annatto
1 tsp GOYA® Minced Garlic
1 lb. ground beef (80% lean)
½ cup GOYA® Tomato Sauce
2 GOYA® Manzanilla Olives Stuffed with Minced Pimientos, sliced
GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
3 boxes (11 oz. each) frozen GOYA Ripe Plantains, thawed
1 cup shredded white cheese, queso blanco (optional)

Instructions

  1. Heat oven to 350º F. Heat 1 tsp. oil in large skillet over medium-high heat. Add onions and peppers, cook until soft, about 5 minutes. Stir in recaito, sazon and garlic, cook until garlic is fragrant, about 1 minute more. Add meat to vegetable mixture. Cook, breaking up meat into small pieces with wooden spoon, until meat is browned. Stir in tomato sauce and olives; season with adobo. Continue to cook until flavor comes together and meat and vegetables are evenly combined. Transfer meat mixture to bowl to cool.
  2. Meanwhile, in bowl of food processor, puree ripe plaintains until smooth, about 1 minute; set aside. Grease 3-qt. casserole dish with remaining olive oil.
  3. To assemble casserole, using spatula, evenly spread half pureed plantain mixture on bottom of prepared dish. Spread cooled meat mixture evenly over plantain layer. Top with remaining plantains, smoothing mixture over meat. Sprinkle with cheese. Bake until casserole is cooked through and cheese is melted and golden brown, about 30 minutes. Serve with salad, if desired.
