I’ve been wondering lately, which is busier, the summer or the school year? On one hand, activities during the school year seem to occupy a great deal of time and then, of course, there’s school on top of that. But our summer schedule rivals it closely! Between social obligations, the need to visit family out of town, and all the trips to the library to make sure we’re all caught up on our summer reading, the months before school starts again is pretty darn busy!

On the most hectic days, I really don’t have the time or energy to come up with a healthy three-course meal for my family. As much as I love to feed them well and enjoy an involved culinary experience, between the heat and the packed family itinerary, I just can’t! On those days and evenings, whether it be for lunch or for dinner, I rely on this Smart n’ Tasty Salad.

Thanks to the tuna (though you could use any canned fish), this dish is packed with healthy fat and protein. Thanks to that hefty nutritional boost, I have no guilt whipping up this easy no-cook meal for my family. That’s the ‘Smart’ part this recipe. The ‘Tasty’ part comes is delivered by the Tajín I mix in and sprinkle over the dish. What a shake of the senses such a small addition can make!

This recipe is actually for just one serving so I often quadruple it and call it dinner for everyone! I’ve even been known to wrap some up in a tortilla and pack it in a lunchbox during the school year so don’t think this is just a summer dish.

While this salad really makes a great, light dinner on those hot, hectic summer days, it can also be a healthy, vitamin-filled lunch for the kids in the Fall. Make a note for yourself to double or triple the recipe when you’re preparing it because it’s really that good and you’ll feel great too knowing that despite the crazy schedule that summer brings, you’re still feeding your family healthy and nutritious meals.

SMART N’ TASTY SALAD
Calories: 187 per serving
Serves: 1

Ingredients:
½ cup tuna, packed in water, drained and flaked
½ cup seeded tomatoes cut in cubes
½ tablespoon olive oil
½ tablespoon TAJÍN CLASICO
Balsamic vinegar, to taste
1 cup washed spinach leaves

Instructions:

Mix all the ingredients in a salad bowl and toss well. Sprinkle with TAJÍN CLASICO before serving.
