I was just planning on making fish tacos for tonight’s dinner. I use snapper instead and coat it with fish and chip batter and deep fry it. I use baby spinach leaves instead of cabbage and make a pico de gallo salsa with red wine vinegar, olive oil and crushed garlic, mixed in with diced Roma tomatoes, toasted jalapeno,cilantro,green onions diced avocado and salt. I deep fry my extra large corn tortillas or just warm them up and I add shredded Monterey Jack cheese…I serve with warmed pinto beans un-drained from the can, but add a tiny bit of olive oil and a few dashes of bacon bits for the flavor they give. I might try this recipe though for a change in fish taste..
