We’re either running around making sure the kids have eaten and the laundry is done or we’re nurturing our careers, doing whatever we do to make the money we need to create a better future for our families. There’s no lunchtime for us, right? Wrong.

The Take it Easy Wrap recipe (although, it’s really too easy to even call a recipe, if we’re being honest!) is the answer to the I don’t have time for lunch problem. It’s super fast and you can make it in advance while you’re prepping lunches for the kids (make some for them too!) or quickly after you’ve put the baby down for a nap and realize you haven’t eaten yet. I prefer it fresh and still a bit warm from the griddle but it’s just as delicious pulled out of your bag later in the day.

Another bonus for this wrap recipe is that it’s not a sweet lunch sandwich. I grew tired of peanut butter and jelly pretty early on in motherhood so I’m always looking for alternatives, especially with a higher protein count. This wrap includes deli ham slices but you could substitute with any sliced meat or even shredded leftover chicken. The whole wheat wrap itself offers more fiber to keep you feeling full and satisfied, and it’s nice to change it up from bread too, of course. The sprinkling of TAJÍN before wrapping this baby up is what makes it fun and different. The unique flavor adds so much and I love the savory spiciness it adds.

TAKE-IT-EASY WRAP
Calories: 160 per serving

Ingredients
1 whole wheat tortilla
1 tablespoon light cream cheese
1 tablespoon minced onion
1 cup sliced Romaine lettuce
2 slices low fat ham
½ tablespoons TAJÍN CLASICO

Instructions

  1. Warm tortilla on a griddle.
  2. Spread evenly with the light cream cheese.
  3. Add the lettuce and the ham.
  4. Sprinkle with TAJÍN CLASICO, roll up and cut in two.
